Bavaria Mills was founded in 2006 by Marie and Mike Smith, and they are still the managing principals today. Prior to the development of the bakery, Marie was studying to become a holistic nutritionist and Mike was an industrial process consultant. Both have suffered severe food intolerances and allergies for years. The combination of Marie’s passion for dietary solutions and Mike’s ability to design and create was a perfect match in the evolution of Bavaria Mills Specialty Bakery.
After 12 years of research in perfecting Gluten free cooking, Marie and Mike Smith have created a commercial method of baking. Currently, Bavaria Mills products are distributed in California, Oregon, and Washington to both the grocery and restaurant channels.
